They are different types of tuna on the market and the best one for grilling is yellowfin, or ahi tuna. Always buy your fish from a reputable market. Avoid fish that has any dry or brown spots. The only smell it should have is fresh ocean smell or no smell at all. It is best to purchase it the day you plan to prepare it. We marinate the tuna to keep it from drying out on the grill. If you cook it past medium rare it will be dry.
