Cornish hens are hens that have not yet matured making the meat more tender. The herbs combined with slow roasting make these tiny whole chickens the perfect entrée. My two boys love this recipe because they get excited when they each get their own little roasted chicken. The leftover chicken can be removed from the bone and frozen for future use or can be used in chicken salad. Chef Dave
