This is a light breakfast dish.  The asparagus tips are the most tender part of the asparagus stalk. The flaky crab mixes well into the eggs.  To take this dish to the next level of healthy food, egg substitute is used to reduce cholesterol.  Egg whites can also be used. For ½ cup (125 mL) of raw egg whites you will need egg whites from three large eggs.  This dish does not freeze well but can be made in a larger batch and stored in an airtight container in the refrigerator.  When ready to eat,  simply remove the desired portion, place on a small plate, cover with plastic wrap, and microwave for 45 seconds.
